Easiest (And Most Delicious) Lemon Bars Ever


I love all things lemon.
And I think that lemon is the best dessert for summer time.
But sometimes when it comes to lemon bars, I just don't love the texture.
Well, when I was in Argentina, one of my Chilean companions taught me this amazing recipe.
It is seriously so easy and makes on amazing lemon bar. 
They are a bit thinner than what you are probably used to, but they have an amazing taste and texture.


Easiest (And Most Delicious) Lemon Bars Ever

Crust:
1 c. Butter, softened
1/2 c. Sugar
2 c. flour

1.    Cream together butter and sugar.
2.    Mix in flour
3.    Press into a 9 x 13 pan. The crust will be quite thin. Sometimes I double this to make a
       thicker crust and it is delicious. Just depends on what I'm in the mood for. 


4.    Bake at 350 for 15 - 20 min. or until slightly browned (a bit longer if the recipe is doubled)

Topping:
1 can Sweetened Condensed Milk
4 Medium Lemons
Optional: Powdered Sugar


1.    Squeeze lemon juice into the condensed milk and stir.
       Seriously... that easy!
2.    Pour Mixture over crust
3.    Bake for an additional 15 min.
4.    Let cool and sprinkle with powdered sugar. 




I made these for an FHE group last night and people who don't usually like lemon bars ate these up. Truly, they are that good! And they are the easiest lemon bars you will ever make.

Taco Tuesday

I guess I still can't seem to keep up with the blog! 
We have had a good but busy couple of weeks since the end of the semester. 
Brad is working for the Utah Supreme Court. He's loving it, but not loving the commute so much.
I'm still working and teaching piano and have one week off of school before I start 
the last class of my undergraduate career! I'll be done in June... but who's counting? 
We have been enjoying having our evenings free, and have had some fun date nights:

BYU Art Museum and Sacred Gifts Exhibit
Watching Frozen at home.
Seeing The Drowsy Chaperone and the Scera 
(We would definitely recommend it, but sadly, we went on closing night).

And most recently, Taco Tuesday!
To be honest, this date night happened because I was super behind schedule on Tuesday, 
and simply didn't have time to make dinner.
So after picking Brad up from the Frontrunner Station,
we stopped by Laura's for $1 Taco Tuesday!


Seriously... So so good! 
If you haven't been, go. It is delicious and authentic Mexican food.
And, if you go on Tuesdays or Wednesdays, Tacos are only $1! 
You really can't beat that. 


On another personal note... only 2 more weeks until we are back in AZ!
We already have a pretty long list of summer fun must dos:

Spend as much time as possible with family
See and hang out with our Mesa friends
Go on a Grand Canyon day trip 
Eat a Slickables Ice Cream Sandwich
Visit the Gilbert Temple 
(and of course Mesa, but we haven't been to the Gilbert Temple yet)
Sedona day trip
Eat a bean and cheese burrito from Filibertos
Try out the food at Rasin Caynes
Go to a Drive in Movie
Go to a Dbacks Game
See the 40th Anniversary Show of Saturday's Warrior
Take a Ride on the Desert Bell Boat
Eat at Xaviers

Yes, we are aware that most of these include food... what can we say?
We are so excited to be home for the summer and for all of the adventures that await us.

Anyone have any other Mesa musts that we just can't miss out on?
